Great Holiday Dessert!!

i.e., Gingerbread Pumpkin Trifle.


Happy Sunday!  Sharing a recipe today, an easy (and beautiful) alternative to the traditional pumpkin pie.  Soooo easy and sooo good!




Hoosier Toni recently blogged about a giveaway with Kelli (another Kelli with an "i"!) over at Small Town Stitcher and one of the entries was to comment with your favorite fall dessert.  That got me thinking about Gingerbread Pumpkin Trifle.  It's a Paula Deen recipe.. you know.. the guru of butter. But believe it or not, this one doesn't have butter in it.  Here's the recipe:

2 (14 oz) pkgs gingerbread mix

1 (5.1 oz) box cook and serve vanilla pudding mix

1 (30 oz) can pumpkin pie filling

1/2 cup packed brown sugar

1/3 tsp ground cardamom or cinnamon

1 (12 oz) container frozen whipped topping

1/2 cup gingersnaps, optional

Directions:

Bake the gingerbread according to the pkg directions; cool completely.  Meanwhile, prepare the pudding and set aside to cool.  Stir the pumpkin pie filling, sugar, and cinnamon into the pudding.  Crumble 1 batch of gingerbread into the bottom of a large, pretty bowl.  Pour 1/2 of the pudding mixture over the gingerbread, then add a layer of whipped topping.  Repeat with the remaining gingerbread, pudding, and whipped topping.  Sprinkle the top with crushed gingersnaps, if desired.  Refrigerate overnight.  Trifle can be layered in a punch bowl.

That sounds awesome! I think it's hard to resist anything pumpkin-y. Or gingerbread. I'm going to have to wait to try it until there are a lot more people around to eat it! Thanks for the mention!

It sounds delicious, a pity we don't have all the ingredients in New Zealand!

OMG, that looks amazing! I have everything except gingerbread mix in the house,but I can just make that from scratch. Only an insomniac bakes in the middle of the night! but really, this would go so well with Thanksgiving Dinner tomorrow!

Mmmm...sounds good. I wondered if this was a Paula Deen recipe. I thought I'd seen it before. I will definitely give this one go!

Oh you are so bad to show us that. We are BIG pumpkin fans in my family. I'll save the recipe and see how it goes over with the family. It will be fun to make - although I think I need one of those glass dishes to make it look super good.
